Cold fruit soup

Are you ready!?! It is delicious, seriously.
3 granny smith apples cook in a little water with 2 shakes cinnamon and one shake clove. I had a cucumber which I don’t like but figured it would be good in soup and it is. Take off green skin and cook with apple.
When soft blend.
Add 2 cups frozen or fresh blueberries and blend. Put in refrigerator to get cold. Before serving swirl  a teaspoon of Greek or any kind you like yogurt.  Enjoy cold.

Brussels sprout taco

When you feel the need for green vegetables…get creative.
Chipotle pepper flakes, Chile powder, mesquite, garlic, onion, jalapeño pepper, cheese.
Cook Brussels sprouts in Chipotle flakes, 1 clove garlic and 1/3 small yellow onion.
Canned or homemade refried beans vegetarian or … the choice is yours. I added 1/2 jalapeño pepper I grilled and froze for easy use. Heat the beans add bacon or meat if you want but great without. When the Brussels sprouts are cooked chop them and add to beans. Heat and mix it all together add cheese pour onto a toasted tortilla for taco or steamed for buritto fold and enjoy.

Breakfast of Champions

Cowboy coffee
Water, coffee grounds, cinnamon, tumeric, cayenne pepper, 1 or 2 grains Himalayan pink salt, vanilla, unsweetened chocolate. Bring to just under a boil, stir a bunch, strain and drink.
(Not sure if it really is but sounds good.)
Sauté in drop of peanut oil, onion, yellow pepper, hot green pepper, garlic. Turn off heat. Add spinach leaves, shake a bit Italian bread crumbs, pepper, basil, edible flowers (snapdragons), beat 1 egg and pour over mix in pan. I added a bit of sharp cheddar cheese,  cover with lid and let it cook.

A Bite Inside

I was craving the cake again while visiting my brother who has no sweets in the house. so the only thing left to do was to check out his cupboard. The result was delicious.
1 cup all bran cereal
Soak with orange juice until moist but no extra juice is on the bottom.
Lots of cinnamon
Dash of cayenne pepper
1 teaspoon of vanilla
1 tablespoon of molasses
2 handfuls of raisins
2 eggs
1/4 teaspoon baking soda
1/2 teaspoon baking powder
2/3 cup of flour
2 tablespoon milk
2 tablespoon maple syrup
Small crystalized ginger cut into small pieces ( the bite inside)
Lightly dust the top with walnuts
Bake at 350 degrees for 20 minutes
Light, fluffy, and oh so yummy!

Spinach in a coffeemaker

I haven’t shared any recipes with you for awhile so here goes.  Since I have chosen not to fully unpack as my stay plans to be only a 3 month stay I wanted to share a fun new way of cooking. Not having unpacked any pots or pans I did have a drip coffee maker and since I never drink drip coffee I put it to the best possible use….cooking spinach.  Fill the glass pot with fresh leaf spinach. Pour about 6 cups of distiled water into the top just like you were making coffee. Close the top and let the water drip.  The spinach can sit in the pot for a minute and it will be cooked perfectly.  Don’t throw out the extra spinach water since that is where the vitamins are.  Use the water for soup or perhaps green tea.

Turmeric Tea

Turmeric Tea

2 Tablespoon ginger

1 teaspoon turmeric

1 pinch cayenne

1 pinch black pepper

3 cups cold water

Mix ingredients and heat in the hot water.  Sweeten with agave or honey is needed. Turmeric tea is excellent for joints and stuffy head. It will warm your insides and blood, great spicy taste.  I hope you try it.
